Cooking instructions:
- About a tablespoon of coconut oil
- 2 sweet potatoes diced
- 1/2 of an onion, diced
- 2 chicken nitrate free chicken sausage sliced and cut in half
- 1/2 a bag of kale (or more if you prefer)
- About a 1/4 cup of water
- Heat the coconut oil in a pan with medium heat.
- Add the sweet potatoes and cook until they are slightly soft.
- Add the onions and cook until fragrant (about a couple of minutes).
- Add the chicken sausage. The ones I used are already cooked and pretty much just needs to be heated up.
- Add kale and water. Place a lid on the pot and let the kale cook down for about 3-5mins.
- Remove lid and stir it up.
- Remove from heat.
